I love my new kitchen! It makes me want to bake again. Macrame, gardening, fun at the beach with Poppy, and now baking. I feel like I’m in paradise. And you’re in luck because I’m about to share a super quick and easy-to-make gluten free recipe that’s Celiac proof.
This one’s all about Gluten Free Chocolate Chip Banana Muffins. And they are yum! The original recipe is for Pamela’s Gluten Free Banana Bread Muffins; but, I tweaked them to add the chocolate chips. You could also add blueberries instead and they’d be tasty. This recipe makes about 10 medium sized muffins (see my photos below) or 12 smaller sized muffins.
Ingredients:
4 Tbsp butter, melted
1/2 cup Sugar (or honey)
2 eggs, beaten
*1 cup banana, mashed until soft (= 2 medium sized bananas)
1 Tsp vanilla
1 3/4 cups Pamela’s Baking & Pancake Mix
1/2 Tsp Salt
1/2 cup Hershey’s Chipits Milk Chocolate (Hooray! Hershey’s website states gluten free and I’m Celiac and never had an issue)
*NOTE: If you have some over-ripened bananas that’s even better, or you can freeze and then thaw them.

Directions:
Preheat oven to 350° with rack in center of oven.
Beat together butter, sugar or honey, eggs, vanilla, and banana. For me, I always peel an extra banana for Poppy…


Add remaining ingredients and mix together. Scoop dough into muffin paper or a well-sprayed muffin pan. While I was scooping mine, my little helper Poppy (*wink *wink) was not far from the kitchen.



Bake in a preheated oven for 18 to 20 minutes; the muffins will spring back when lightly touched or an inserted toothpick will come out clean.



Tea and Muffins

They are so quick and easy to make. You can eat them while they’re fresh out of the oven and the chocolate chips are still gooey, or freeze them to heat up with some butter another day.
